‘Hidden Veg’ is a tried and tested way of getting some goodness and nutrition into our little ones. Now we never really had this problem with my eldest boy. He has his moments but he basically would give most things a go. On the other hand. my little toddler is turning out to be somewhat of a fusspot when it comes to what he eats. One thing he does love however, is his pasta. So, as joyful as I find scraping up bits of mashed potato or cold noodles mixed with sweetcorn, if you can’t beat ’em, feed ’em!
So here’s a great wee pasta sauce, packed with veg and a gift to make.
I used 2 tins of chopped tomatoes, 2 large red peppers 1 large red onion, 2 scallions 2 good handfuls of carrot batons, 1/2 teaspoon of lazy garlic and a few twists of ground black pepper.
Preheat the oven to 220C, chop the veg and pile into a Pyrex dish. Add the garlic, tomatoes and black pepper. Stir well, lid on and into the oven for approx 35-40 mins or until all the veg has softened.
Leave to cool and then blitz using whatever contraption or gizmo you can get you hands on. Portion out and use, or freeze for whenever you need it.
Easy, healthy and cost effective with the entire batch costing around £3, nice!
