So as its Bread & Baking month here’s a really easy recipe for apple & pomegranate pancakes.
The batter mix I always remember getting from one of the many series’ Jamie Oliver did a few years ago now (thanks Jamie). It’s simply 4 things:
- 1 cup of self-raising flour
- 1 cup of milk
- 1 egg
- A pinch of salt
Bung them in a mixing bowl and give them a good whisk. Check out the cup I used…100% true!
Grate a large apple (I used pink lady) and add a handful of pomegranate seeds.You can either blitz this mix in a nutri- blender thingy-ma-doodle or mush it up well with a a utensil of your choosing..
Add this to the batter along with 1 teaspoon of sugar & 1 teaspoon of cinnamon. A final stir in and you’re ready to go.
Heat some spray oil in a pan (repeat this as needed when cooking the pancakes). Add a ladle of the batter and cook for about 2-3 minutes on each side or until golden brown or slightly beyond this if you like them that way.
Serve with whatever you fancy. I was unusually healthy and went with more fruit. This is a great one to get the kids involved with the mixing. Its also a good way to get some fruit into them. My son is now a full on pomegranate fan!
